In 1965, Joey shared a recipe for Carrot Cake Pudding with my grandmother Anita, then living in Winnipeg with her husband Cosmo Castaldi (and my 12 year old dad) who I believe was a professor at the university there. My grandmother wrote down Joey’s very simple recipe and it became a part of our family Thanksgivings (on both sides of the border) and I am preparing to bake it today. Thank you, Miss Joey, for being a part of our family, too! - Posted by: Jesse Keen (Friend) on: Nov 24, 2021
